When I was in my early 20’s I used to enjoy doing the odd bit of baking, but until recently I have not done any since then. I would always brag about the Victoria sponges I used to make, well I seemed to remember they were good.
A few months ago while shopping in a supermarket I came across some packet sponge mixes on special offer, so I bought some. Got home all excited about doing some baking again and ended up rather disappointed with the results. Just not enough mix to make a nice deep sponge and so I decided to buy some floor, caster sugar, eggs, butter and a 5 oz pot of double cream, to have a go at making my own.
In the beginning I tried a number of ways to mix the ingredients and finally found one way that not only produced a nice tall sponge, but one that was so light, it almost floated of the plate.
I mix using a £4 electric whisker I got from Wilkinson’s, 175g of caster sugar with 175g of butter for a good two minutes. Then I add three eggs and whisk for another two minutes or so. Then I slowly add 175g of self raising floor and keep whisking for about three more minutes.
Grease the two tins and pop them in the oven and while they are baking whisk up the double cream for the filling. Once baked a nice layer of jam is spread on the bottom part of the sponge and then add all the cream added before putting on the top part of the sponge.
I have also been working on making corn beef pasties, but they need a bit more work before I get them right. Do you do any baking or cooking? What’s your specialty, how do you put it together and can we see a picture of the final result please.
